food i love: quicky red velvet whoopie pies.

Our apartment decided to host our own FHE tonight (in which we hand-picked the members of our family :). Our friend Joey gave an AMAZING lesson and we played a rousing game of Pit (yours truly was the Pit Master). And you can't have a Mormon gathering without treats, so Marti and Collin and I made red velvet whoopie pies. Because Marti loves red velvet cake. SO MUCH. We used this super easy recipe, though the consistency was more cookie-ish and less cake-ish than I think it should have been. Not sure if it was because of the recipe or because we didn't have an electric mixer. Either way, they were still quick and delectable.  
1 box red velvet cake mix
1 cup (2 sticks) butter, softened to room temperature
2 eggs
1 8 oz. package cream cheese, softened to room temperature
1 lb. powdered sugar
1 tsp. vanilla

1. Preheat oven to 350 degrees.
2. Mix cake mix, 1/2 cup (1 stick) of butter and two eggs in electric mixer until combined.
3. Roll dough into balls and place onto baking sheet about two inches apart.
4. Bake for 10-12 minutes.
5. Meanwhile, cream 1/2 cup of butter, cream cheese and vanilla in electric mixer. Gradually add powdered sugar and mix until smooth.
6. When cookies have cooled, spread filling over one, then top with a similar-sized cookie.
